I made some chicken meatballs yesterday and they turned out delish! So I feel bad though because I totally took this recipe from somewhere but I can not for the life of me remember the website! Sorry to whoever I took this from!
Chicken Meatballs
Ingredient:
1 lb ground chicken
small onion
garlic (I like the kind that comes in a jar or Trader Joe's has some that is in the freezer section and anytime you need it you just pop a little bit out of the container. They both taste good!)
Parsley (about half a cup)
Sea Salt
Pepper
Tomato Paste
Olive Oil
Italian bread crumbs
1 egg
Preheat the oven to 400. Chop up the onion small and cook it in a pan with the garlic until its clear. Set it aside to cool. Place chicken in a bowl and add parsley, salt, pepper, 1 tablespoon of tomato paste, 1 egg, 1 cup of bread crumbs and the onion/ garlic mixture. Mix together. Form your meatballs and place them on a baking sheet. I did find my meatballs to be a little sticky and not so firm so I added a bit more breadcrumbs until I liked the consistency. Mix together 1 tablespoon of tomato paste and olive oil. Brush on top of the meatballs. DO not worry if the paste and oil do not mix together. Cook meatballs for about 20 minutes.
I served these over wheat pasta with some quickly sauteed tomatoes, garlic, bella mushrooms and spinach leaves. I drizzled some truffle oil on top and topped with Parmesan shavings. So good and pretty healthy!

Christmas morning. I'm sure Sean is thrilled that photo is up for people to see.
Cheeks b-day at the park! We went to the train park for his actual birthday and had the party the following weekend.
His party turned out great! Thank you to everyone that could make it! It was a lot of fun.
Luke in his new chair. He loves it. He actually loves to climb all over it.
I was so happy Dani (my sister) was in town. I would never have been able to get everything done without her!
And...this is why her needed a haircut. Out of control!

Well well well....
It has been almost forever since you have last heard from me. So much has happened! 1st birthday, first steps, now running, sort of talking, expecting #2, first haircut, Christmas, 2nd haircut, first live show Yo Gabba Gabba. Oh and yes...I said expecting #2!
I am going to have a house full of boys! I am so excited. Today we went to the dr. and he said everything is good and the baby is healthy! So come July 20th give our take a few days/weeks we will have another sweet little peanut.

Boy from the South

That's an oldie but a really funny one.
Cheeks is starting to talk! Well he only says two words. Dada and bye. He sounds like a little guy from the south when he says bye. It is so funny! Baa as he is waving. It is so funny. He also yells dada when he is trying to get Sean's attention. Not surprised at all that he is going to be a chatty one!

I have begun the party planning! I have started on the birthday banner. Well designing it on the computer at least. It is taking forever especially since I can't sit and do it all at once.

How cute is that cake! I want to make a cake similar to that one. It fits into our theme. The theme for Cheeks birthday is hot coco and marshmallows. Doesn't that cake look like a giant marshmallow with chocolate poured on top? I figured since it is winter we needed a winter theme. If you have any other great ideas please share!

Uh Oh....

So I think Cheeks is going to be walking soon. He really wants too. He pulls himself up on everything and is running around while holding on to his train all the time. We are going to start baby proofing the house. I look around and our house feels like a death trap to me!

I have been wanting to redecorate my house for a while now. Right now it is a little contemporary and now want my house to look like you stepped into Anthropology. I have been researching and have found some great DIY projects to help with keeping the cost down of decorating. I just need to find the time to do it. I would LOVE to be able to get it all done before Luke's birthday so the house doesn't look like a total wreck.

It's Friday and I'm in love

How could you not love that face? Another busy weekend ahead. I am so tired and have to work an event tonight as well as attend an engagement party afterwards. It's a good thing I love/ am related to this couple. The girl in this couple is Sean's cousin.
Sunday I am picking up Holly

(I haven't seen her in months!) and Marbury and we are going to Hissyfits where they are having a huge craft fair! It should be fun. I'm sure Marbs will find a ton. Hopefully there is a lot of cute boy stuff there for Cheeks. I did buy him a super cute pair of checkered velcro Vans today from Hissyfits. They were only 18 bucks! I also bought him a pair of Yo Gabba Gabba Vans online the other day too. Unfortunately those weren't as cheap.
I NEED to take some time this weekend and clean my mess of a house. I also need to start baby proofing more. Cheeks is totally about to start walking. I know it'll be before his first birthday. His balance is getting really good. The past few days he has let go to whatever he was holding and just stood there without falling. I'm not sure I am ready for him to walk.

Check out my Yoda and Ninja baby. Hahaha. He was so good about keeping his costume pieces on. I thought the ninja headband would have been ripped off but he kept it on. He wasn't too keen on trick or treating. All he wanted to do was get down and walk. I think we got like 5 pieces of candy. Pretty sure I lost a few carrying him around the whole time.
